How to Make It

  1. 1In a skillet, heat olive oil over medium heat.
  2. 2Add cooked chicken, cumin, chili powder, and salt.
  3. 3Cook for until warmed and flavorful.
  4. 4In a bowl, combine tomatoes, onion, jalapeño, cilantro, lime juice, and salt to make pico de gallo.
  5. 5Heat a skillet or griddle over medium heat.
  6. 6Place a tortilla in the skillet, sprinkle cheese evenly, then add chicken and more cheese.
  7. 7Top with another tortilla.
  8. 8Cook for per side until golden brown and cheese is melted.
